Ingredients

* 2 cups fresh strawberries hulled and crushed
* 12 oz. ricotta cheese
* 1/4 cup sugar
* 1 teaspoon vanilla extract
* 12 crepes
* Confectioners’ sugar

Preparation

In a bowl cream the ricottta cheese, vanilla extract and sugar. Fold in the strawberries. Spoon the mixture into the center of each crepe. Roll the crepes and lightly dust with confectioners’ sugar.
