Mushroom Risotto Recipe. A full-flavored variation of the basic risotto recipe, made with delicious rich Italian mushrooms, fresh herbs and a touch of Madeira wine. Appreciate our Mushroom Risotto recipe.
* 25 fl oz chicken stock , or vegetable stock
* 2 Tbsp olive oil
* 1 2⁄3 oz butter , or mushroom flavored butter like truffle butter
* 7 oz mixed fresh mushrooms, roughly chopped , such as porcini or chanterelle or black trumpets or use dried mushrooms
* half onion, finely chopped
* 2 garlic cloves, chopped
* 1 Tbsp thyme, chopped
* 8 ¾ oz short grain rice, like Arborio or Carnaroli Italian rice
* 4 Tbsp Madeira wine
* 3 Tbsp sherry
* 2 Tbsp crème fraiche , (optional)
* 2 Tbsp parsley, chopped
* 7⁄8 oz Parmesan , shaved
* salt and pepper
* 2 saucepans
* 1 wooden spoon
* 1 ladle
