Ingredients

* 1/2 cup butter
* 1/4 cup ricotta cheese
* 1 tsp. vanilla
* 1 cup sugar
* 1 egg beaten
* 2 cups flour
* 1/2 tsp. baking soda
* 1/2 tsp. salt

Preparation

Blend butter and ricotta cheese until creamy. Gradually add the sugar and vanilla. Beat until well blended. Add egg and mix well. Add the remaining ingredients and mix until all the ingredients are incorporated. Use a teaspoon to scoop up the batter and drop it onto a greased cookie sheet. Bake in a preheated 350 degree oven for 10 minutes.
