Ingredients

* 3 pounds Ricotta
* 10 eggs
* 1 tablespoon vanilla
* 1 cup sugar

Preparation

Preheat oven to 350 degrees. Mix all the ingredients in a large bowl with an electric mixer for about 3 minutes until everything is mixed well. Pour into a spring pan 7 inches or 10 inches in size. Bake for 45 minutes to 1 hour. Let stand until cool and release spring. You can grate lemon peel and/or orange peel on the pie. Keep refrigerated. Enjoy!
